Everyday Cookies/Sweet Breads/Etc.
Apple Crisp
From Mom
Cooking time: 30-40 minutes
Preheat to 350
5-6 cups peeled, sliced apples
1c flour
1c sugar
1t baking powder
3/4t salt
1 egg
1/3c melted and cooled butter
1/2t cinnamon
Place apple slices in greased cake pan
Mix together dry ingredients and egg with fork until crumbly
Sprinkle over apples
Pour butter over all
Sprinkle cinammon
Bake 30-40 mins for 350
Serve warm by self, with milk, with whipped cream or ice cream
Big Bird's Banana Bread
From Sesame Street Library
Makes 1 loaf
Cooking time 1 hour
Preheat oven to 350
3 peeled ripe bananas
3/4c honey
1/4c melted butter
1/2t baking soda
1 1/2c whole wheat flour (I always use regular flour... never have whole wheat flour on hand - just make sure its all purpose flour)
Melt butter
Mix bananas then butter then rest in bowl. Pour in oiled pan. Bake 1 hour. Cool and serve.
Philadelphia 3-step Cheesecake Bars
from Philly Cream Cheese recipe book
Serves 16
Cooking time 40 minutes
Preheat oven to 350
1 1/2c graham cracker crumbs
1/4c butter melted
2 pkg (8oz) Philly cream cheese softened
1/2 c sugar
1/2t vanilla
2 eggs
Mix crumbs and butter, press firmly on bottom of 8 or 9 inch baking pan
Beat cream cheese, sugar and vanilla with mixer on med. speed until well blended.
Add eggs and mix just until blended
Pour over crust
Bake 40 minutes or until center is almost set
Cool
Refrigerate 3 hours or overnight. Cut into 16 bars. Store leftover bars in fridge.
*** Easier method*** Buy a 6oz graham cracker pie crust already made at store. Omit crumbs and butter above. Prepare batter as directed, pour into pie crust. Bake and cool as directed.
Chocolate Chip Cookies

Cooking time 9-11 minutes
Preheat to 375
2 1/4c flour
1t baking soda
1t salt
1c butter softened
3/4c white sugar
3/4c brown sugar
1t vanilla extract
2 eggs
2c chocolate chips
1c chopped nuts (optional)
Combine flour, baking soda, salt in small bowl
Beat butter, sugar, brown sugar, vanilla in big mixing bowl
Add eggs one at a time, beating in between
Gradually add flour/baking soda/salt combo
Stir in chips/nuts
Drop by spoon onto ungreased sheet
Bake 9-11 on 375
Let stand 2 minutes
Coffee Cake
from Grandma Cooper
Cooking time 45 minutes
Preheat oven to 350-375
1 box of white cake mix
2pkg (2 of the smaller ones) instant vanilla pudding - do not get no sugar added, must have real sugar in it, also MUST be instant pudding
4 eggs
1c water
1t vanilla
2/3c oil
Mix above ingred. well
Pour into 9x13 pan
Then combine
1c white sugar
3t cocoa
3t cinnamon
1c chopped nuts
Swirl this mixture through the batter
Bake 45 minutes
Check with toothpick for doneness
***note: this is amazing for breakfast***
Coke Cake
from Mom C for Ian's birthday
Cooking time 30-40 minutes
Preheat to 350
Combine:
2c flour
2c sugar
1t salt
Heat to a boil
2 sticks margarine
3T cocoa
1c Coke (DO NOT USE DIET COKE - must be regular Coke because of the sugar)
Pour heated mixture over flour mixture. Mix together.
Add and mix
1/2c buttermilk (1/2T vinegar to 1/2 c milk - substitution)
2 eggs
1t baking soda
3t vanilla
Bake in greased 9x13 pan
Frosting for Coke Cake
6T margarine
2 1/4T cocoa
4 1/2T regular Coke
2 5/8c powdered sugar
3/4c chopped walnuts
Combine margarine, cocoa and Coke in saucepan and bring to a boil
Pour over powdered sugar and beat until smooth
Add nuts
Spread over hot cake.
Cinnamon Twist Minis
from Mom C
Cooking time -- whatever the crescent roll package says
Preheat to 375
1/2c sugar
1 8-count can crescent rolls
3T melted butter
8 large marshmellows halved
1/2c powdered sugar
1T milk
Spray cookie sheet
Mix sugar and cinnamon in bowl (not included in main ingred.)
Separate dough into triangles
Cut triangles in half lengthwise
Brush each triangle with melted butter
Sprinkle with cinammon and sugar
Place marshmellow half at wide end of triangle
Roll triangle starting from wide end to enclose the marshmellow
Pinch edges to seal
Place twists on sheet, seam side down, 2 inches apart
Bake
Blend powdered sugar and milk in small bowl
Drizzle over warm twists
Monster Cookies
1 egg
1/2c packed brown sugar
1/3c white sugar
1/4t vanilla extract
1/4t corn syrup
3/4t baking soda
2T and 2t butter
1/2c peanut butter
1 1/2c oats
1/3c chocolate chips
1/3c M&Ms
Preheat oven to 350
In a large bowl, beat egg
Add ingredients in order, mix well
Place on ungreased cookie sheet for 12-15 minutes
*Note from making them -- make sure to spoon small cookies on cookie sheet. This recipe online said to use an ice cream scooper - bad idea. It made ginormous cookies.
Peanut Butter Cookies

Serves 4 dozen
Cooking time 8-10 mins
Preheat to 350
1c butter flavored Crisco
1c Jif peanut butter
1c sugar
1c brown sugar
2 eggs
Mix together
Combine 2 1/2c flour
1t baking powder
1 1/2t baking soda
1/2t salt
Add to shortening mixture
Roll dough into small balls and flatten on a cookie sheet with a fork, criss cross pattern
Bake at 350
***Ian thinks they taste funny if you don't use Jif peanut butter***
Peanut Blossoms (different than Peanut Butter Cookies)
Cooking time 8-10 minutes
Preheat 350
1 3/4c flour
1t baking soda
2t salt
1/2c sugar
1/2c brown sugar
1/2c shortening
1/2c peanut butter
1 egg
2T milk
1t vanilla
Hershey Kisses
Combine oil ingredients
Mix on low speed with mixer in large bowl
Shape into balls (around 1") and roll in sugar
Bake at 350 for 8-10
Top each cookie with chocolate kiss
Vanilla Texas Sheet Cake
from my former boss Steve
Cooking time 20 mins
Preheat to 350
2 2/3c flour
2c sugar
1c margarine - divided
1/2c oil
2 eggs
3T vanilla - divided
1t cinnamon
1 1/2t baking soda
2/3c buttermilk
1 8oz pkg cream cheese
1 lb box sifted powdered sugar
Preheat 350 - grease and flour 17x11 baking pan
1. Stir together flour and sugar
2. Put 1/2c margarine, oil and water in a sauce pan, bring to boil. Pour over number 1, beat throughly
3. Beat eggs, 2t vanilla, cinammon, baking soda and buttermilk
4. Spoon into prepared pan. Bake 20 minutes.
5. WHILE BAKING - beat together until creamy: 1/2c margarine, 1t vanilla and cream cheese. Blend powdered sugar till fluffy.
6. Remove cake. Spread cream cheese mixture over warm cake. Let cool completely.
Zucchini Bread

Cooking time 50-60 minutes
Preheat to 350
3 eggs
1c oil
2c sugar
2c grated zucchini (peeled and seeds removed)
2t vanilla
3c flour
1t sugar
1/2t baking powder
1t salt
1t cinnamon
1/2c chopped nuts or raisins (optional)
Grease and flour two loaf pans
Add oil and sugar to beaten eggs
Add zucchini and vanilla; cream well
Mix all dry ingred. and add to creamed mixture. Stir in nuts or raisins if desired.
Bake 50-60 mins at 350.
Holiday Cookies
Brownie Mounds
Serves 4 dozen
Cooking time 10 mins
Preheat 350
Mix and set aside:
3 1/3c flour
1t baking powder
1/2t salt
Mix 2/3c margarine (or butter flavored Crisco)
1 1/2c sugar
Stir in 2/3c light corn syrup
2 eggs
Add dry mixture
6 - 1oz squares, melted UNSWEETENED chocolate
2t vanilla
1 1/2c chopped nuts (walnuts or pecans)
Drop by heaping teaspoonfuls onto greased baking sheet
Bake
*** Chocolate square substitute -- 1 chocolate square = 3T cocoa and 1T shortening***
Candy Cane Cookies
from Mom C
Serves 4 dozen
Cooking time 9 minutes
Preheat 375
1c shortening
1t salt
1c powdered sugar
1/2t red food coloring
1 egg
1/2c or less crushed candy cane
1 1/2t almond extract
1/2c sugar
1t vanilla
2 1/2c flour
Mix shortening, powdered sugar, egg, almond extract, vanilla and salt
Divide dough in 1/2
Add red food coloring to one (so essentially half of your dough will be red and the other half not red)
*this is where I, as a novice baker, gets confused LOL*
Roll dough into 4 inch strips on lightly floured surface
Twist like rope and into a cane shape
Roll 1 white piece
1 red piece
then twist the two together and repeat
At the end they should look like candy canes
Bake 9 minutes until lightly browned
Sprinkle with candy cane and sugar when hot
Serve
Date Pudding (Cooper Christmas Dessert)
1c sugar
1/4c melted shortening
2c soft bread crumbs
1/2c flour
2 1/2t baking powder
2 eggs
1c dates (cut, 1 - 7oz pkg)
1/2c nuts
1t salt
1/2t cinammon
1/4t cloves
1/4t allspice
Add sugar to shortening and stir until well blended.
Add dates, beaten eggs, crumbs and milk. Mix well.
Combine dry ingredients, stir into egg mixture. Add nuts and turn into a well greased and crumbed container (top of double boiler or container to fit inside crockpot) Steam for 3 hours.
Serve with warm vanilla sauce (recipe below)
Vanilla Sauce for Date Pudding
Burnt sugar:
1/2c sugar
1/2c water
Mix in 1 pt. Pyrex measuring cup
Microwave on high 8-10 minutes until amber color
Let stand 1/2 - 1 minute until deep golden brown. It gets darker as it stands, so don't overcook it.
For sauce:
1/4c sugar
2c water
2T flour
1t vanilla
1T butter
Sprinkle of salt
Mix sugar and flour together. Add water, stirring in slowly. Add burnt sugar, cook until thick. Add vanilla and butter.
Serve warm over pudding (recipe above)
Never Fail Fudge
1 can evaporated milk
8T (1 stick) butter/margarine
4c sugar (a little less is okay too)
Combine ingredients in a large saucepan
Bring to a boil, stirring constantly, to medium 'soft ball' stage on a candy thermometer
Remove from heat and stir in 12oz chocolate chips and 1 jar (7oz) marshmellow cream
Stir until blended
Add chopped nuts, if desired
Pour into greased 9x13 pan
Cool and cut into squares
Aunt Kathy's No Bake Cookies
from Mom
2c sugar
6T cocoa
1/2c milk
1/4c butter
In large saucepan, mix and boil (above ingredients) when rolling boil QUICKLY ADD
3c instant oatmeal
1/2c creamy peanut butter
1t vanilla
Mix and drop by tsp on wax paper, let cool
Snickerdoodles
from Mom
Serves 90 cookies
Cooking time 8-10 minutes
Preheat 425
1 1/2c sugar
1c shortening (Crisco)
2 eggs
2 3/4c flour
2t cream of tarter
1t baking soda
1/2t salt
cinnamon and sugar mixed together
Cream sugar, shortening and eggs with mixer
Blend flour, cream of tarter, baking soda and salt
Add to cream mix
Mix the two well
Form into walnut sized balls
Roll each in cinnamon and sugar mixture
Place on ungreased cookie sheet 2 inches apart
Bake
Cool
